What is Spirulina?
Spirulina is called a blue green algae. It is actually a single celled animal classified as bacteria with a simpler cell structure than plants including true algae. Technically it is now part of the genus Arthrospira rather than Spirulina, but has kept the name in common use and is also still typically referred to as an alga.
It is important to note that Spirulina is considered a vegan food. It is from a group of bacteria known as cyanobacteria due to its blue tinted green color. The green comes from chlorophyll. Cyanobacteria are responsible for approximately 30% of the photosynthesis on earth.
The blue comes from an amazing chemical called phycocyanin from the Greek words phyco meaning algae and kyanos meaning dark blue. There is much to say regarding both chlorophyll and phycocyanin. We will discuss both of these more extensively in another section.
One of two species of Spirulina have been used as a food in Africa and the Americas for centuries. When Cortez encountered the Aztecs, he reported their use of spirulina as food. There is an illustration in the Florentine Codex depicting Aztecs harvesting spirulina by skimming it from lakes using ropes. Text accompanying tat illustration describes the spirulina being dried into square cakes and used as food. Scientists and historians believe spirulina has been used throughout Mesoamerica by many cultures for many centuries. Spirulina was used as food in the Kanem Empire (700 - 1376) which included modern Chad, parts of southern Libya and eastern Niger. Spirulina is still popular in Chad where it is harvested from lakes and ponds in the Lake Chad region and dried into cakes called dihé which are used to make broths.
