Organic Cinnamon Powder is Ceylon cinnamon, also known as True cinnamon. It is pure, certified organic cinnamon from the island of Sri Lanka (Ceylon). True cinnamon is a finer, rarer and more delicate spice than cassia cinnamon, common in the United States. It has a more nuanced flavor with a hint of natural sweetness. It is less bitter and sharp than cassia and is preferred by most professional chefs.
The majority of the cinnamon in the United States is cassia or a blend. We only use organic true cinnamon. Cassia can have toxic effects if used regularly. True cinnamon contains traces of the same compound, coumarin, but it has about 100 times less than cassia and is, therefore, less of a concern.
Cinnamon has a long history as a medicinal plant and there is much evidence in modern scientific literature suggesting it has many health benefits.
